Gruyère Cheese Grits
4 cups water
1 teaspoon salt
1 clove garlic. minced
1 cup quick cooking grits
1/2 cup unsalted butter
1 cup (about 4 ounces shredded cheddar cheese)
1/2 cup about 2 ounces, shredded Gruyère Cheese
1/2 cup milk
hot pepper sauce o taste
salt and white pepper to taste
2 eggs, well beaten
Preheat oven to 425 ℉
In a large saucepan combine the water, salt and garlic. Bring to a boil and add grits.
Stirring constantly, cook over medium heat until grits thicken.
Remove from heat and stir in butter, cheddar cheese, Gruyère and milk.
Add hot pepper sauce, salt and pepper to taste. Quickly stir in eggs.
Pour grits into greased 2 quart baking pan.
Bake for one hour.
