Gruyère Cheese Grits

- 4 cups water
- 1 teaspoon salt
- 1 clove garlic. minced
- 1 cup quick cooking grits
- ½ cup unsalted butter
- 1 cup (about 4 ounces shredded cheddar cheese)
- ½ cup about 2 ounces, shredded Gruyère Cheese
- ½ cup milk
- hot pepper sauce o taste
- salt and white pepper to taste
- 2 eggs, well beaten
- Preheat oven to 425 ℉
- In a large saucepan combine the water, salt and garlic. Bring to a boil and add grits.
- Stirring constantly, cook over medium heat until grits thicken.
- Remove from heat and stir in butter, cheddar cheese, Gruyère and milk.
- Add hot pepper sauce, salt and pepper to taste. Quickly stir in eggs.
- Pour grits into greased 2 quart baking pan.
- Bake for one hour.
