Country Ham with Red-Eye Gravy
An old southern favorite than can serve as the centerpiece for a big country breakfast.
6 slices country ham, 1/4 inch thick
2 tablespoons butter
2 tablespoons brown sugar
1/2 cup strong black coffee
Cut gashes in fat around edges of ham slices.
In a heavy skillet, melt butter over low heat. saute ham until slightly browned, turning several times.
Remove ham from skillet and keep warm.
Stir sugar into pan drippings. Stirring constantly, cook over low heat until sugar dissolves.
Add coffee and mix well. Simmer for 5 minutes.
Spoon red-eye gravy over ham prior to serving.
