Country Ham with Red-Eye Gravy

- 6 slices country ham, ¼ inch thick
- 2 tablespoons butter
- 2 tablespoons brown sugar
- ½ cup strong black coffee
- Cut gashes in fat around edges of ham slices.
- In a heavy skillet, melt butter over low heat. saute ham until slightly browned, turning several times.
- Remove ham from skillet and keep warm.
- Stir sugar into pan drippings. Stirring constantly, cook over low heat until sugar dissolves.
- Add coffee and mix well. Simmer for 5 minutes.
- Spoon red-eye gravy over ham prior to serving.
